A savoury flan, Flemish in origin, in Picardy the flamiche is a kind of leek flan which is found in all the traditional restaurants in the region.
Picardy flamiche (flamichepicarde)is made with puff or shortcrust pastry, the white part of leeks cut into round slices and sweated in butter, crème fraîche, eggs and salt. It is often served as a starter with a green salad, or as a main dish with fried potatoes. It can also be enjoyed cold as a starter, with a nice glass of dry white wine.
There are various kinds of flamiche, with onions, endives, or maroilles cheese, the latter being very much enjoyed in Nord.
