This sweet tart, Saint-Tropez's signature dish, was created in the 1950s by a pastry chef of Polish extraction, Alexandre Micka, who had the recipe from his grandmother, and it owes its renown to the actress Brigitte Bardot. It was during the filming of "And God Created Woman" that the actress fell in love with this famous tart, and suggested to the pastry chef that he call it after Saint-Tropez.
Flavoured with orange blossom water, this delicious round sugary brioche is unusual in that it has butter cream as well as pastry cream. Traditionally, this cake is eaten at teatime or for dessert, with a sweet wine such as a Monbazillac, or a natural sweet wine such as the famous Muscat de Beaumes-de-Venise.
