Among his favorite dishes, the "cannelloni de denti with cake, caviar, fresh vegetables and citrons of San Giuliano". The raw fish, cut into thin slices, is filled with crumbled cake meat, and topped with a small line of iodized caviar. The whole offers an insane freshness to the taste buds in apnea.
