Saulon Castle is located in the town of Saulon-la-Rue, in the Côte-d'Or department, 13 km south of Dijon.
A first building was built in 1460 by the lord of the place, a certain Bonnifal, who was also the King's lawyer in parliament.
The current castle was erected in the 17th century, before and after a fire that struck the estate in 1656. The classical-style dwelling is surrounded by various outbuildings (stables, chapel, mill, greenhouse, etc.).
The estate passed to the Clermont-Perrigny family in 1750. However, during the Revolution, the castle was damaged and then seized and sold to the surrounding bourgeois. Under the July Monarchy, in 1830, another branch of the former owners, the Clermont-Montoison, took possession of the premises. Work was then initiated: the old moats were filled in, the park was redesigned and the castle was given an additional floor. From then on, the main building was four levels high, including one floor under the attic.
The property then had various owners and in 2018, the castle was taken over and restored to become a luxury hotel establishment. The building has regained its luster, as have the outbuildings, and the 24-hectare park remains rich and neat with ponds, gardens and French-style vegetable gardens around the dwelling and the nearby pavilion, wooded areas.
