A great speciality of Bordeaux, the canelé is a sweet treat that is hard to resist when you stay in the Gironde capital! This delicious little cake takes the shape of a ribbed cylinder and its soft, tender centre is flavoured with rum and vanilla, and covered with a delicious caramelised crust.
The mixture made of flour, milk, eggs, butter, vanilla, rum and cane sugar, is prepared and poured into special moulds, greased liberally and traditionally made of copper. It is then left to bake in a very hot oven for about ten minutes and then at a lower temperature for about forty minutes, although the cooking time varies depending on the type of oven and the size of the moulds...
Best eaten on the day it was made, the canelé can be enjoyed at any time of day, for breakfast, tea or dessert, served with a nice cup of tea or a lovely glass of sweet white wine.
