Enjoyed very much in winter, Champenoise fondue is a shared dish made from Langres and Chaource cheeses, mixed with liquid crème fraîche, white wine, potato flour and pepper. All the ingredients are heated in a fondue pan till partly liquid, then pieces of bread can be dipped in.

Champenoise fondue is usually served with a green salad and a selection of local charcuterie, to make a complete meal. It is often accompanied by a glass of white wine, such as a whiteChardonnay Coiffy.
