Jewels of the gastronomy of Aquitaine, Landes free-range poultry – chicken, capon, fatted chicken, turkey, quail and guinea fowl – and Landes free-range duck, reared outdoors and fed exclusively on vegetable materials, enjoy Protected Geographical Indication and Red Label status. Famous for the savour of its meat, both firm and moist, Landes free-range poultry can be roasted, grilled, sautéed, braised or steamed. Delicate and delicious, free-range Landes duck can be enjoyed in many ways: as foie gras, confit of duck breast, sausage, pâté, potted meat...

At Montfort-en-Chalosse is the Chalosse Foie Gras Cooperative, which includes about a hundred free-range duck producers and follows a strict bill of specifications, giving its fresh products the right to display the Red Label.

The Festivolailles in Saint-Sever, at the end of November, is the south-west's great gastronomic meeting, celebrating festive poultry. There is a free-range poultry market, an exhibition of disguised festive birds, a cookery competition, demonstration workshops and many street entertainments.
