A Limousin speciality, potato pie is also known as Limousin pie. It is a kind of pie eaten hot as a main course. A variation named tourtière is also found in Haute-Vienne.
This potato pie consists of brioche pastry or more recently puff pastry, to which we add potatoes, garlic, shallots, parsley, pepper and cream. We also put salt pork in the pie to make a nutritious and hearty meal. In general, the potato pie is served with a green salad. Before the introduction of the potato in France in the 18thcentury, Limousin pie was made with a mixture of bread dough and crème fraîche.
Traditionally, this pie is served with a cider or red wine such as a Bordeaux.
