Enjoyed for breakfast and teatime alike, this traditional speciality of Réunion island is a delicious cake made from sweet potato flavoured with vanilla and rum. To make this easy recipe full of exotic flavours, as well as these three ingredients you will need soft butter, eggs, cane sugar and flour. After boiling, peeling and mashing the sweet potatoes, just mix them well with the rest of the ingredients, before baking the mixture for around an hour at 170°C. If you are able to wait that long, the sweet potato cake is even nicer the next day!
