While the Alpes-Maritimes area is above all famous for its ratatouille or pan bagnat, it nonetheless has other culinary specialities that are very popular, for example Swiss chard tart. Originally from Nice, this recipe can be eaten as a savoury or sweet dish.
Although its exact date of creation is not known, there is a mention of Swiss chard tart dating back to the 15th century, in a publication by the gastronome Martino Rossi, who gives the recipe for it.
The recipe consists of finely chopping Swiss chard leaves, which are found in abundance in the region, then adding various ingredients. While the flavours vary according to the chosen recipe, Swiss chard tart always features pine kernels and raisins. In general, its sweet version is generally topped with icing sugar. The savoury version of Swiss chard tart sometimes also contains rice or parmesan.
