Vertou sausage comes from the town of the same name near Nantes. This place was once known as Vertou-les-Boudins, a nickname invented by Napoleon III himself. He was once served it by one of his ministers, Busson-Billot, and loved the sausage immediately, to the point of having it delivered every week.
Whether it takes the form of a black or white pudding, Vertou can be eaten cold or hot, served with a glass of red Loire Valley or Côtes du Rhône wine.
