Côté Sushi takes you in the footsteps of the first Japanese having
immigrated to Peru.
At the end of the nineteenth century, following a Japanese demographic crisis and
to a need for workers in Peru, an agreement is signed between the
two countries. In 1899, a first wave of 790 Japanese immigrants
landed in Peru. They were given the nickname Nikkei.
To cope with the shortage of their traditional ingredients, these
they have revisited their recipes by combining ingredients
Peruvian like the pepper that replaces wasabi:
thus was born the Nikkei kitchen.
