A candy legend...
A sweet and delicate, a checkered history, a secret guarded recipe for over 300 years, the barley sugar Moret-sur-Loing all the ingredients of a candy legend!
Created under the reign of Louis XIII in 1638 in Moret by Benedictine Sisters of Our Lady of the Angels, the barley sugar was a fate more tumultuous, closely linked to the Priory. If this confection made from sugar and a decoction of barley to the softening properties was first used by preachers, she became King of pertussis quickly and his court. But in 1792, in the revolutionary turmoil, production stops. The closed convent, it was thought the recipe permanently lost. It was then that a Benedictine confided on his deathbed precious formula to his confidante, making him swear to transmit in turn when a new congregation would settle in Moret. The promise was kept, production resumed, and cartons and sticks renouèrent with success. Its popularity is denied once more: Napoleon loved them, Sarah Bernhardt did not come on stage without his voice heated with candy. If it is no longer produced by nuns since 1972, the candy is still made according to Moret seventeenth method, without adding or coloring or flavor agent.
A museum dedicated to this candy is implanted at the Moulin Provencher, on an island in the middle of the Loing. You can discover its history, before making a gourmet shop in the Place Royale.
