A very popular dessert in Franche-Comté, galette comtoise is an interesting variation on the famous frangipane king cake. This one typically consists of choux pastry flavoured with orange blossom.
In the Middle Ages, it was considered a simple and economical dessert that anyone could make. Galette comtoise originated in the 11thcentury. At that time, the canons of Besançon began to appoint their leader by hiding a coin in some bread. This approach was soon adopted by all congregations. Soon, the bread was replaced by a bun, and then a sort of caramelised bread dough, before arriving at the famous galette comtoise.
