Pistou soup, found mainly in Alpes-Maritimes and Var, is a refreshing summer vegetable soup with pasta. Of Genoese origin, as this part of France was once Italian, it is traditionally served as a starter.
In general, it is composed of water, green beans, potatoes and tomatoes, which are seasoned before adding vermicelli in the middle of the cooking process. Just before serving, we add the crushed garlic with basil and olive oil to enhance the flavour. Today, it is possible to find other ingredients in it, like courgette, but it must always be summer vegetables. This typical dish of the region is generally eaten with a red wine,Bandol-type rosé or Cassis-type white wine.
Every July, at the Sacaron estate in Pourrières, Var, a pistou soup and local food fair takes place. It's a chance to discover a farmers' market, games for children, and very entertaining animal shows.
