A Catalan recipe, escalivada consists of a mixture of vegetables cut into strips (aubergines, peppers, tomatoes and onions) and marinated in olive oil. You start by washing the vegetables and wrapping them in kitchen foil, then bake them for around thirty minutes. You then take the tomatoes out and leave the rest to cook for around fifteen minutes so it's all nice and tender. You then wait for it all to cool and cut the vegetables into strips or circles, before marinating them on a dish with olive oil, chopped garlic, thyme, salt and pepper.
Escalivada is generally served as a starter or as tapas, on bread. It can also be served with meat or in a sauce for pasta.
