Produced in Noards, Normandy by Le Plessis cheese dairy, the Pavé du Plessis is a cheese made with raw cow's milk, with a soft, unpressed, uncooked centre. It is left to ripen for two to three months, which gives it its yellow colour and rind covered in white and orange mould. The Pavé du Plessis is square-shaped, hence its name ("pave" meaning "cobblestone"), and is 50% fat. It goes well with a red wine from Burgundy or Bordeaux.
